Vanilla Pudding

2 cups water

2 tablespoons cornstarch

¾ cup cashew meal

2 tablespoons vanilla

½ teaspoon almond extract

¼ cup pure maple syrup

1 tablespoon cooked carrots

1 tablespoon oil

Blend/whiz all the ingredients in blender. Pour into a source pan and cook until thick, stirring constantly.
