Banana Oatmeal Crisps

2 cups quick oats

½ cup coconut

¾ cup chopped dates

2 tablespoons unbleached flour

¼ cup whole wheat flour

1 ripe mashed banana

1/3 cup oil

½ teaspoon salt

1 tablespoon vanilla

¼ cup water or juice

Mix the first six ingredients together. Whiz remaining ingredients in blender. Add whizzed mixture to dry ingredients and mix well. Let stand 10 minutes. Spoon onto greased cookie sheet. Bake at 375 degrees for 20-25 minutes or until nicely browned.
