Carob Pecan Balls

1 cup oil

½ cup pure maple syrup

1 teaspoon vanilla

1 cup whole wheat or unbleached flour

1 cup oat flour (blend oats in blender)

1 cup finely chopped pecans

½ cup carob chips

Cream oil, honey, and vanilla. Add whole wheat and oat flours slowly, while stirring. Fold in nuts and carob. Form into balls, bake at 325 degrees for 10 minutes. Sprinkle with fine shredded coconut.
