Scrambled Tofu

Ingredients:
14 oz water packed tofu
2 tsp. extra-virgin olive oil (optional)
1 medium onion, chopped (optional)
2 Tbsp. nutritional yeast flakes
1 tsp. turmeric (for color)
1 ½ tsp. onion powder
1 tsp. garlic powder
2 tsp. parsley flakes
½ tsp. paprika
½ tsp. salt or to taste
Chopped pepper and/or diced tomato (optional)

Directions:
Drain and mash tofu with fork or potato masher. Sauté onions and oil in a skillet. Add in tofu and remaining seasonings, mixing well. Cook on medium heat until desired texture.
