Black-eye Pea Salad

1 1b black-eye pea

½ bunch parsley

1 bottle Italian salad dressing

½ sweet bell peppers (red, yellow and green)

½ cup dark brown sugar


Cook black-eyed peas on low heat until tender. Drain water. Wash parsley and chop finely. Dice sweet peppers. Pour salad dressing into the blender with sugar (salad should be slightly sweet). Blend on low until sugar is dissolved. Mix all ingredients with the black-eyed peas. Let cool and serve cold.
